The Dos Chinos food truck serves up simple, delicious street food with its own fusion twist that has become the hallmark of SoCal cuisine.  I spoke to Hop about what made the Dos Chinos food truck so special.

“We’re foodies,” he said, “and we love Latin and Asian cuisine.”  Hop credits his grandma with instilling a lifelong passion for food and the Komodo Truck further motivated him to create his own fusion cuisine.  But it took getting hit by a drunk driver for Hop to make the leap from working employee to full-time business owner.  “I was driving to my second job one night when I was hit.  It really shook me up and was my wake-up call that I needed to do something with my life,” he said.  The food truck was up and running rather quickly, and still decorated with their menus rather than a fancy wrap – and that comes in handy because they attract such a crowd that it’s hard to see a menu.

In the five months since their inception Dos Chinos has been seen all around Orange County and recently participated in DinDin-A-GoGo and they’ve become regulars at ATOMIC as well.  Friday night at ATOMIC I kept seeing people order plate after plate of Dos Chinos fries.  Made with clarified butter and topped with cotija cheese these fries are a tasty snack when you need a break from dancing – and they were delicious.  But Hop told me that their best seller – and most requested – item is a taco or burrito with the roasted pork belly.
